Ingredients

  • 1 c. cornmeal
  • 1/3 c. all-purpose flour
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 eggs
  • 1 c. buttermilk
  • 1/2 c. vegetable oil
  • 1 can cream-style corn
  • 1/3 c. chopped onion
  • 1 (8 oz.) hot salsa
  • 1/2 c. shredded Cheddar cheese

Directions

    In a mixing bowl, combine first six ingredients.

    Combine remaining ingredients; add this to dry ingredients and mix only until moistened.

    Pour into a 9 x 13-inch baking dish or pan. Bake at 350° for 30 to 40 minutes, or until bread is a golden brown and tests done.
