  • 1 c. yellow cornmeal
  • 1 1/2 tsp. salt
  • 1/2 tsp. soda
  • 1 c. milk
  • 2 eggs, slightly beaten
  • 1/4 c. oil
  • 2 c. cooked rice
  • 2 c. shredded sharp Cheddar cheese
  • 1 (17 oz.) can creamed corn
  • 1 (3 1/4 oz.) can ripe olives, drained and sliced
  • 1/2 c. chopped green onions
  • 2 Tbsp. chopped green chilies
  • 4 drops hot pepper sauce

    In large bowl, mix cornmeal, salt and soda.

    Add remaining ingredients; stir just until blended.

    Turn into well-greased 12-inch round baking dish or skillet.

    Bake 40 or 45 minutes at 350° or until set.
