- 1 c. yellow corn meal
- 1 lb. can cream-style corn
- 1/2 tsp. salt
- 2 eggs, beaten
- 1 lb. ground chuck
- 2 jalapeno peppers, diced
- 1 c. milk
- 1 tsp. baking soda
- 1/2 c. margarine, melted
- 2 c. Cheddar cheese, grated
- 1 medium onion, chopped
Directions

1Mix meal, salt and soda.

2Add milk, corn, margarine and eggs. Meanwhile, brown beef with onion and jalapenos; pour off fat. Grease large skillet.

3Pour half of batter into skillet.

4Top with meat mixture, then cheese.

5Pour remaining batter over cheese. Bake at 375° for 45 minutes.
