  • 2 c. self-rising meal
  • 1 c. self-rising flour
  • 1/4 tsp. soda
  • 1/2 tsp. baking powder
  • 3 eggs
  • 1/3 c. oil
  • 1 1/2 Tbsp. sugar
  • 1 small can cream-style corn
  • 1/2 c. buttermilk
  • 1/2 c. sweet milk
  • 1 medium onion, chopped
  • 3/4 c. grated Cheddar cheese
  • 2 medium jalapeno peppers (if desired), chopped

    Grease large skillet and sprinkle with meal.

    Mix the ingredients and bake at 400° for 30 to 35 minutes or until brown.
