Mexican Cornbread

Ingredients

  • 1 c. self-rising cornmeal
  • 1 c. buttermilk
  • 1/3 c. oil
  • 1 large onion, chopped
  • 2 eggs
  • 1 small can creamed corn
  • 1 c. grated cheese (1/2 in mixture, 1/2 on top)
  • jalapeno peppers to taste (at least 3)

Directions

    Mix ingredients. Pour into a hot, greased iron skillet.

    Top with 1/2 cup grated cheese. Bake at 350° for 1 hour and 15 minutes. Super good with homemade vegetable soup.
