Mexican Cornbread

  • 1 can chopped chilies
  • 3 eggs
  • 2 1/2 c. milk
  • 3 c. cornbread mix
  • 1 1/2 c. shredded Cheddar cheese
  • 1 (8 oz.) can cream-style corn
  • 1 large onion
  • 1/2 c. vegetable oil
  • 3 tsp. sugar
  • 1 tsp. baking powder

Directions

    Beat eggs in large bowl; blend in milk.

    Stir in cornbread mix, cheese, corn, onion, oil, sugar and baking powder.

    Blend. Pour into greased 9 x 13-inch dish and bake at 400° for 40 minutes.
