  • 3 c. white cornmeal
  • 3 eggs
  • 1 3/4 c. milk
  • 2 tsp. salt
  • 4 Tbsp. sugar
  • 1 3/4 tsp. baking powder
  • 1 c. cooking oil
  • 1 c. pork cracklins (optional)
  • 1 c. Shoe Peg corn
  • 1 c. chopped onion
  • 1/2 c. jalapeno peppers, chopped
  • 1 1/2 c. grated cheese

Directions

    Bake 1 hour in 9 x 13-inch casserole dish.

    Be sure to grate cheese well.
