- 2 eggs, beaten
- 1 c. cream-style corn
- 3 tsp. baking powder
- 1 c. sour cream
- 2/3 c. oil
- 1 c. yellow corn meal
- 1 1/2 tsp. salt
- 1 small can jalapeno peppers, chopped or green chilies
- 1 c. Cheddar cheese, grated
Directions

1Combine eggs, corn, baking powder, sour cream, oil and corn meal.

2Mix well.

3Pour half of batter in 9-inch pan.

4Spread jalapeno peppers on top of batter and half of grated cheese.

5Top with remaining batter and sprinkle with rest of cheese.

6Bake 1 hour at 350°.
