  • 2 eggs
  • 1 c. buttermilk
  • 1 can Mexican corn
  • 1/3 c. cooking oil
  • 3 green jalapeno peppers, chopped real fine
  • 1 c. grated cheese
  • 1 stick butter
  • 1 1/2 c. Sunflower corn meal
  • 3 tsp. baking powder
  • 1 Tbsp. salt

Directions

    In large bowl, mix in first 7 ingredients.

    Stir in sifted ingredients.

    Pour in a pan sprayed with Pam.

    Cook about 30 minutes at 350°.

    When gets done, turn bread upside-down on plate and cut up a stick of butter or margarine on top.
