- 1 1/2 c. yellow cornmeal
- 2 eggs
- 2/3 c. Mazola oil
- 1 c. sour cream
- 1 c. whole kernel corn
- 3 tsp. baking powder
- 1 tsp. salt
- 3 chopped jalapeno peppers
- 1 c. grated cheese
- 1 small onion, chopped (optional)
Directions

1Mix all ingredients, except cheese.

2Pour half of batter into hot, greased pan.

3Cover with half of cheese.

4Add remaining batter and sprinkle the rest of the cheese over the top.

5Bake at 350° for 30 minutes.
