Pork Fried Rice

- 3/4 lb. boneless pork loin
- 1 c. quick cooking brown rice
- 2 tsp. olive oil
- 3 c. sliced cabbage
- 1 chopped sweet red pepper
- 1 Tbsp. chopped fresh ginger
- 1 bunch green onion, sliced
- 1 c. frozen peas
- 4 Tbsp. low salt soy sauce
- 1 Tbsp. Oriental sesame oil
Directions

1Slice pork into 1/4-inch thick slices.

2Cut into small strips. Cook rice according to package directions.

3Heat oil in nonstick Dutch oven or 12-inch skillet over medium heat.

4Add cabbage, red peppers and 2 tablespoons of water.

5Cook, covered, 8 minutes, stirring occasionally.

6Stir in pork and ginger.

7Cover and cook 3 to 5 minutes or until pork is no longer pink in the center.

8Remove from heat.

9Stir in rice, green onion and peas.

10Stir soy sauce and sesame oil into rice mixture.

11Cook 2 minutes and serve.
