  • 1 pound Lean Ground Hamburger
  • 1 cup Onion, Chopped
  • 4 ounces, weight Canned, Diced Green Chilies
  • 2 teaspoons Chili Powder
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Ground Black Pepper
  • 1 package (8 1/2 Oz. Size) Jiffy Cornbread Mix
  • 1 cup Milk
  • 14- 1/2 ounces, weight Canned Creamed Corn
  • 2 whole Eggs
  • 13 cups Canola Oil
  • 2 cups Cheddar Cheese, Shredded

Directions

    Preheat oven to 350 F. In a skillet over medium heat, brown hamburger.

    Then add the onion and green chilies and cook until tender.

    Stir in the chili powder, salt, and pepper.

    In a large mixing bowl, combine cornbread mix, milk, creamed corn, eggs, and oil.

    Pour half of the corn batter into a greased 9x13 baking pan.

    Cover with the meat.

    Sprinkle with cheese.

    Pour the remaining corn batter over the meat and cheese.

    Bake for 40-45 minutes until golden brown.
