  • 1 lb. ground chuck
  • 1 onion, chopped
  • 1 c. yellow corn meal
  • 1 c. sweet milk
  • 3/4 tsp. salt
  • 1/2 tsp. soda
  • 1/2 c. bacon drippings
  • 2 eggs, well beaten
  • 1 large can creamed corn
  • 2 cans green chilies
  • 8 oz. Cheddar cheese, grated

Directions

    Brown meat and onion; drain and set aside.

    Combine corn meal, milk, salt, soda, bacon drippings, eggs and corn.

    Grease large iron skillet.

    Pour half of batter into skillet.

    Add meat, green chilies and cheese.

    Add remaining batter.

    Bake at 350° for 45 to 50 minutes or until golden brown.
