  • 1 lb. ground meat
  • 1 pkg. taco mix
  • 1 (16 oz.) can whole tomatoes
  • 1 (10 oz.) can enchilada sauce
  • 4 oz. Cheddar cheese, grated
  • 1 (8 oz.) carton cream-style cottage cheese
  • 1/2 c. chopped olives (optional)
  • 1 egg, beaten
  • 1 pkg. flour tortillas

    Brown meat and drain fat.

    Add taco mix, tomatoes, enchilada sauce, salt, pepper and olives.

    Cover and cook over low heat for 20 minutes.

    Combine egg, cheese and cottage cheese in a bowl and mix by hand.
