- 2 Tbsp. chopped green pepper
- 2 Tbsp. minced onions
- 2 Tbsp. chopped tomatoes
- 3 eggs, slightly beaten
- 1 Tbsp. shredded Cheddar cheese
- 1 Tbsp. shredded Mozzarella cheese
- 2 Tbsp. mild salsa
Directions

1In an 8-inch, nonstick saute pan, cook vegetables in butter until soft.

2Add eggs and cook over medium heat until omelet style, stirring gently until eggs begin to set.

3Flip omelet and continue cooking, but no longer than two minutes.

4Add cheese and salsa. Fold in half and remove from pan.
