- 1 (9-inch) pie shell
- 1 1/2 c. Monterey Jack cheese
- 1 (20 oz.) can refried beans
- 1/2 lb. summer or Italian sausage
- 2 eggs
- 1 1/2 c. half and half
- 1/2 tsp. salt
- 2 Tbsp. diced green chilies
- 1 small onion, diced
Directions

1Preheat oven to 325°.

2Sprinkle cheese over bottom of crust. Top with refried beans and sausage cut into small bits.

3Combine half and half and egg in small bowl.

4Whip eggs slightly.

5Add green chilies and onion and stir again.

6Pour this mixture over other layered ingredients in pie pan.

7Bake 1 hour or until mixture is firm.

9May add avocados, tomatoes and sour cream to top if desired.
