  • 1 (9-inch) pie shell
  • 1 1/2 c. Monterey Jack cheese
  • 1 (20 oz.) can refried beans
  • 1/2 lb. summer or Italian sausage
  • 2 eggs
  • 1 1/2 c. half and half
  • 1/2 tsp. salt
  • 2 Tbsp. diced green chilies
  • 1 small onion, diced

Directions

    Preheat oven to 325°.

    Sprinkle cheese over bottom of crust. Top with refried beans and sausage cut into small bits.

    Combine half and half and egg in small bowl.

    Whip eggs slightly.

    Add green chilies and onion and stir again.

    Pour this mixture over other layered ingredients in pie pan.

    Bake 1 hour or until mixture is firm.

    May add avocados, tomatoes and sour cream to top if desired.
