  • 1 lb. dried red beans (pink or kidney beans), soaked overnight
  • 4 c. cold water
  • 1 large onion, coarsely chopped
  • 1 lb. can tomatoes
  • 2 garlic cloves, minced
  • 1 tsp. crushed red pepper or 2 tsp. chili powder
  • 2 tsp. salt
  • 1/4 lb. salt pork or bacon, chopped

    Put soaked and drained beans into crock-pot.

    Add water and all remaining ingredients.

    Cover and cook on High for 2 hours, then turn down to low for 8 hours.
