- 2 tsp. oil
- 1 c. rice
- 1/2 c. chopped celery
- 1/4 c. chopped onion
- 1/4 chopped green onion
- 1 large garlic clove, minced
- 2 tsp. cumin
- 2 c. water
- 3 chicken bouillon cubes
- 1/2 c. tomato sauce
Directions

1Add oil, celery, onion, green pepper, garlic and cumin to 12-inch skillet.

2Saute over medium-high heat, stirring constantly, until rice is browned.

3Remove from heat.

4Combine water and bouillon in medium saucepan.

5Bring to a boil.

6Add to rice mixture; stir in tomato sauce.

7Heat just until mixture simmers.

8Cover and continue to simmer 20 minutes.

9Remove from heat.

10Let stand, covered, 10 minutes before serving.
