- 1/2 c. minced onion
- 1/2 c. green peppers, cut in strips
- 2 Tbsp. butter or margarine
- 2 (15 oz.) cans chili with beans
- 1 (14 1/2 oz.) can whole tomatoes
- 1 c. water
- 1 pkg. taco seasoning mix
- 1 1/2 c. dry Minute rice
Directions

1Cook and stir onion and peppers in hot butter for about 2 minutes until tender, not brown.

2Add remaining ingredients except rice.

3Bring to full boil, breaking down tomatoes with spoon. Stir in rice.

4Cover; remove from heat.

5Let stand 5 minutes. Fluff with fork.

6Makes 4 servings.
