Mexican Rice Cornbread

- 1 1/2 c. cornbread mix
- 1 can cream-style corn
- 2 jalapeno peppers, finely chopped
- 1 c. milk
- 2 Tbsp. onion, finely chopped
- 1 c. cooked rice
- 1 c. grated Cheddar cheese
- 2 eggs
Directions

1Mix all ingredients well.

2Pour oil in bottom of a 13 x 9-inch pan and sprinkle with 2 teaspoons of cornmeal.

3Stick pan in a 375° oven until hot; remove pan from oven and pour in batter. Return to oven and bake for 45 minutes.
