Mexican Rice Cornbread

  • 1 1/2 c. cornbread mix
  • 1 can cream-style corn
  • 2 jalapeno peppers, finely chopped
  • 1 c. milk
  • 2 Tbsp. onion, finely chopped
  • 1 c. cooked rice
  • 1 c. grated Cheddar cheese
  • 2 eggs

Directions

    Mix all ingredients well.

    Pour oil in bottom of a 13 x 9-inch pan and sprinkle with 2 teaspoons of cornmeal.

    Stick pan in a 375° oven until hot; remove pan from oven and pour in batter. Return to oven and bake for 45 minutes.

    (Could bake in muffin tins.)
