- 2 pounds ground chuck steak (preferably freshly ground)
- Salt and pepper, to taste
- Hamburger buns
- Special equipment: Mesquite charcoal
Directions

1Place ground meat in large bowl.

2Add salt and pepper, and mix lightly with hands.

3Shape meat into thick, one-third-pound patties, being careful not to press too hard.

4(The patties should be neither too thin nor too dense, so that they retain their juiciness when grilled.)

5Set patties on a plate and salt liberally.

6Grill the patties over mesquite charcoal grill until medium-rare.

7Just before the burgers come off the fire, grill buns lightly.
