- 1 c. sugar
- 1/2 c. white corn syrup
- 1 c. roasted salted peanuts
- 1 tsp. butter
- 1 tsp. vanilla
- 1 tsp. baking soda
Directions

1In a 1 1/2-quart pot, stir sugar and syrup well and cook on High in microwave oven for 4 minutes and 10 seconds.

2Stir in nuts and cook on High 5 minutes until light brown.

3Add butter and vanilla and blend well.

4Cook on High for 2 minutes.

5Add baking soda until foamy; stir well.

6Pour quickly onto buttered cookie sheet.

7Smooth mixture into a thin layer.

8Be careful, peanut brittle is very hot and sticky.

9Cool 1 hour.

10Lift brittle onto bread board; break into pieces.

11Store in airtight container. Makes 1 pound.
