Microwave Chocolate Pudding

Ingredients
- 2 1/2 c. low-fat milk
- 3 Tbsp. cornstarch
- 1/4 c. sugar
- 1/4 c. unsweetened cocoa powder
- 1/8 tsp. salt
- 6 packets sugar substitute (Equal, Sweet 'N Low, etc.)
- 1 Tbsp. margarine
- 1 tsp. vanilla extract
Directions

1In a 2-quart microwave-proof dish, stir together milk, cocoa, salt, sugar and cornstarch until cornstarch dissolves.

2Cook on High (100%) power for 2 minutes.

3Stop, take mixture out and whip with wire whip.

4Return to microwave and use wire whip to beat mixture.

5Return to microwave for 2 additional minutes on High. Remove from microwave, using wire whip, beat in margarine, vanilla extract and packets of sweetener.

6Pour into individual serving dishes.

7Refrigerate.
