- 2 Tbsp. fine cornflake crumbs
- 1 c. all-purpose flour
- 1 c. yellow corn meal
- 1 Tbsp. baking powder
- 1 Tbsp. sugar
- 1 tsp. salt
- 2 eggs
- 2/3 c. milk
- 1/2 c. vegetable oil
Directions

1Sprinkle cornflake crumbs in an oiled 5 1/2 to 6-cup microwave safe ring mold.

2Combine flour, cornmeal, baking powder, sugar and salt.

3Add eggs, milk and oil; mix well.

4Pour into ring mold. Cook, uncovered, in microwave 5 minutes at High or until a cake tester comes out clean; rotate 1/2 turn once.

5Immediately invert on serving platter.
