- 1 Tbsp. vegetable oil
- 1 medium onion, thinly sliced
- 1/4 c. tomato paste
- 1 tsp. oregano
- 4 turkey fillets *
- 1 clove garlic, minced
- 2 c. mushrooms, sliced
- 1 (19 oz.) can tomatoes
- 1 tsp. thyme
- salt and pepper
Directions

1In an 8-inch microwave-safe dish, combine oil, garlic and onion.

2Cover and microwave at High for 3 minutes.

3Add mushrooms, tomato paste, tomatoes, thyme and oregano; mix well.

4Place fillets on top of vegetable mixture with thicker ends toward outside.

5Cover and microwave at High for 10 minutes.

6Turn turkey so that less cooked area is toward the outside.

7Cover and microwave at High for 15 minutes.

8Let stand, covered, for 10 minutes.

9Season to taste with salt and pepper.
