- 3 c. chicken broth
- 1/2 c. wild rice
- 1/2 c. basmati rice
- 5 Tbsp. butter
- 1/2 lb. fresh shiitake mushrooms, stems trimmed
- salt to taste
- freshly ground pepper to taste
Directions

1Cook rice for 25 minutes or until water is gone.

2Add 2 tablespoons of butter and set aside after transferring to baking dish.

3Use remaining butter to saute mushrooms for 4 minutes. Stir into rice and season with salt and pepper.

4Cover baking dish and bake for 20 minutes at 250°.
