  • 1 medium onion, chopped
  • 1 stalk celery, chopped
  • 2 medium carrots, chopped
  • 1 c. fresh or frozen green beans
  • 1 medium zucchini, chopped
  • 1 (10 oz.) pkg. frozen chopped spinach
  • 1 (28 oz.) can tomatoes
  • 1/2 c. uncooked macaroni (try whole wheat)
  • 1 (15 oz.) can navy beans with juice
  • 1/4 tsp. basil
  • 1/4 tsp. oregano
  • 1/4 tsp. cayenne pepper
  • water as needed
  • 2 c. stock
  • 1 medium potato, cut into eighths
  • 1/2 c. onions, sliced
  • 1/2 c. celery, sliced
  • 1/2 tsp. fresh ground black pepper
  • 1 Tbsp. dried parsley
