- 1 onion, finely chopped
- 1 to 2 cloves garlic
- 1 1/2 c. celery, chopped
- 1 1/2 Tbsp. olive oil
- 2 large cans peeled tomatoes or 4 c. fresh tomatoes, chopped
- 2 bay leaves
- 1 tsp. oregano
- 2 tsp. basil
- pinch of fennel seed
- 3 carrots
- 3 zucchini
- 1 bunch broccoli
- mushrooms
- 2 potatoes
- 1 large can kidney beans
- 1 to 2 handfuls pasta (shells, etc.)
Directions

1Saute onion, garlic and celery in oil until soft.

2Crush garlic.

3Add tomatoes and herbs.

4Simmer the soup gently while you prepare vegetables, beans or grains you decide to use.

5Thirty (30) minutes before serving soup, add beans, noodles or grains and vegetables.

6After combining all the ingredients, bring to a boil. Simmer briefly and correct the seasonings to your liking.

7If you like, top each bowl of soup with fresh grated Parmesan cheese. Great with fresh cornbread or French bread.
