- 1/2 c. sugar
- 1 Tbsp. lemon juice
- 1 tsp. vanilla
- vanilla wafers
Directions

1Beat first 5 ingredients together until smooth.

2Line muffin tins with muffin papers (cupcake).

3Place 1 vanilla wafer in bottom of each.

4Then divide mixture between the 24 muffin cups. Bake 15 minutes at 325°.
