Mini Cheese Quiche

  • 1/2 packages (16 Oz. Package) Phyllo Dough
  • 2 whole Eggs
  • 1 cup Whipping Cream
  • 1 pinch Salt
  • 1/2 teaspoons Nutmeg
  • 1 pinch Pepper
  • 6 ounces, weight Swiss Cheese, Shredded

Directions

    Preheat oven to 400 degrees.

    Thaw out one roll of phyllo dough.

    Beat eggs, add whipping cream, salt, nutmeg and pepper.

    Beat until fluffy.

    Using 4 sheets of the phyllo dough at a time, use a biscuit cutter or a cup to cut round circles (4 sheets thick).

    Press the circles into a mini-muffin pan.

    Cut a small cube of Swiss cheese and place in the bottom of each shell you have created.

    Fill to the top of each shell with whipped mixture.

    Bake for 15-20 minutes or until golden brown.

    This will fill mini-muffin pans.
