- 1/2 c. graham cracker crumbs
- 2 Tbsp. margarine, melted
- 15 oz. Smucker's low sugar apricot spread
- 1 (8 oz.) pkg. cream cheese, softened
- 1/2 tsp. vanilla
- 1 egg
- 1/4 c. sugar
Directions

1Combine graham cracker crumbs and margarine, stirring well. Line muffin pans with foil baking cups.

2Spoon approximately 1 teaspoon crumb mixture into each liner.

3Gently press into bottom. Beat cream cheese at high speed of mixer until light and fluffy. Gradually add sugar and mix well.

4Add egg and vanilla; beat well. Spoon mixture into liners.

5Bake at 350° for 10 minutes.

6Spoon 1 tablespoon apricot spread on each cheesecake.

7Chill thoroughly. Yields 2 dozen.
