Mini Peach Bread Pudding

  • 14 cup sugar
  • 3 12 cups milk
  • 4 eggs
  • 14 teaspoon vanilla
  • 4 12 cups diced bread
  • 1 cup diced peach
  • hot water

Directions

    In a bowl, whisk together sugar, milk, eggs and vanilla until smooth.

    Fold in bread and peaches and mix well.

    Cover and refrigerate for 1 hour.

    Preheat oven to 300.

    Spoon bread mixture into ramekins.

    Place ramekins in roasting pan and pour hot water to come a quarter of the way up the sides.

    Bake for 50 minutes or until toothpick inserted in the center comes out clean.
