Mixed Bean Soup

Ingredients

  • 1 lb. of mixed beans (large limas, baby limas, navy beans, lentils, green split peas, barley, black-eyed beans, pinto beans, yellow split peas and black beans)
  • 2 Tbsp. salt
  • 3 to 4 ham hocks
  • 1 large onion
  • 1 (16 oz.) can tomatoes
  • 1 tsp. chili powder
  • juice of 1 lemon
  • pepper to taste

Directions

    Wash beans and place in a large kettle.

    Cover with water 2 inches above bean line.

    Add salt and soak overnight; drain in the morning.

    Add 2 quarts of water (8 cups) and ham hocks.

    Bring to a boil.

    Add 1 onion, tomatoes, chili powder, lemon juice and pepper.

    Simmer for 3 hours.

    Remove ham from hocks before serving.

    Makes 4 quarts.
