Mixed Bean Soup

Ingredients
- 1 lb. of mixed beans (large limas, baby limas, navy beans, lentils, green split peas, barley, black-eyed beans, pinto beans, yellow split peas and black beans)
- 2 Tbsp. salt
- 3 to 4 ham hocks
- 1 large onion
- 1 (16 oz.) can tomatoes
- 1 tsp. chili powder
- juice of 1 lemon
- pepper to taste
Directions

1Wash beans and place in a large kettle.

2Cover with water 2 inches above bean line.

3Add salt and soak overnight; drain in the morning.

4Add 2 quarts of water (8 cups) and ham hocks.

5Bring to a boil.

6Add 1 onion, tomatoes, chili powder, lemon juice and pepper.

7Simmer for 3 hours.

8Remove ham from hocks before serving.

9Makes 4 quarts.
