Mixed Bean Soup

  • 1 pt. Jack Rabbit mixed beans
  • 1/2 c. onion, chopped
  • 1 carrot, grated
  • dill, chopped
  • 2 garlic cloves
  • soup bone or beef shank
  • 5 1/2 c. water
  • 1 1/2 c. beef broth
  • chopped parsley
  • 1/2 tsp. dry mustard
  • salt and pepper
  • 2 Tbsp. vegetable oil

Directions

    Soak beans.

    Heat oil in stockpot; saute onion and carrot until tender.

    Add beans, bones, water, broth, dill and parsley. Bring to full boil, then reduce heat and simmer 1 to 2 hours, or until beans are tender.

    Remove bones; cut meat from bones and return meat to soup.
