Mock Indian Pudding

Ingredients

  • 2 Shredded Wheat biscuits
  • 2 eggs, slightly beaten
  • 2 c. milk
  • 1/4 to 1/2 c. molasses (according to taste)
  • 3/4 tsp. cinnamon
  • 1 tsp. vanilla

Directions

    Pour hot water over the Shredded Wheat biscuits. Drain quickly and mash. Add eggs, cinnamon and vanilla.

    Mix well until biscuits have no lumps.

    Add milk and molasses.

    Place in lightly buttered 2-quart casserole dish.

    Bake at 350° for 1 hour and 15 minutes. Serve hot or cold with vanilla ice cream.
