- 3 pairs salt herring roes
- 23 cup dry bread crumbs
- 2 cups half and half
- 6 tablespoons melted butter
- 5 eggs, beaten
- 1 teaspoon sugar
- 18 teaspoon nutmeg
- 4 tablespoons butter
- 1/2 cup fresh bread crumbs
Directions

1Rinse roes well and soak for 3 hours.

2Drain and chop fine.

3Preheat oven to 350 degrees.

4Mix chopped roes with 2/3 cup bread crumbs, half and half, melted butter and eggs.

5Season with sugar and nutmeg.

6Grease baking dish with 4 tablespoons butter and press 1/2 cup fresh bread crumbs into butter.

7Pour in roe mixture and bake for 30 to 40 minutes or until center is nicely puffed.
