- 1 cup granulated sugar
- 8 ounces sour cream, can use light/non-fat
- 2 eggs, or 1/2 cup egg substitute
- 2 teaspoons vanilla
- 1 1/4 cups tart apples, peeled and chopped
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
Directions

1In a large mixing bowl, beat together granulated sugar, sour cream, eggs and vanilla on low speed with an electric mixer until combined.

2Beat on medium speed for two minutes.

3Sift together dry ingredients, in separate bowl.

4Add to sour cream mixture, beat on low speed until combined.

5Stir in apples.

6Turn into a greased 9x5x3 inch loaf pan.

7Bake at 350 for 55 to 60 minutes.

8Cool on rack for 10 minutes.

9Remove bread from pan; cool completely.
