- 2 1/4 c. all-purpose flour
- 2 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. soda
- 1 tsp. grated lemon peel
- 1 tsp. vanilla
- 1 c. butter or margarine
- 1 (8 oz.) carton pineapple or mandarin orange yogurt or 1 c. sour cream
- 3 eggs
Directions

1Grease and flour fluted or tube pan.

2Combine the ingredients in a large bowl.

3Beat 3 minutes at medium speed.

4Pour into pan. Bake at 325° for 60 to 70 minutes or until cake springs back when touched.

5Cool upright in pan 15 minutes.

6Remove and eat!

7May glaze with lemon icing.

8Delicious served with fruit flavored sherbet.
