Ingredients
- 2 envelopes gelatin
- 2 1/2 c. chicken broth
- 4 c. diced chicken
- 2 tsp. lemon juice
- 2 Tbsp. chopped parsley
- 3/4 c. chopped celery
- 2 Tbsp. pickle relish (sweet)
- 1 c. mayonnaise
- salt and pepper to taste
- 1 medium tomato, sliced
- 1 medium green pepper, sliced into rings
Directions

1Soften gelatin in 1/2 cup broth.

2Melt remaining broth; add gelatin and stir until gelatin dissolves.

3Add chicken, salt and pepper.

4Cook until begins to thicken.

5Fold in remaining ingredients.

6Pour into 2-quart mold or loaf pan.

7Chill several hours; slice, serve on lettuce and top with tomato slices and green pepper rings.
