Molded Shrimp Loaf

Ingredients

  • 2 pkg. unflavored gelatin
  • 1/2 c. cold water
  • 1 (10 3/4 oz.) can tomato soup
  • 8 oz. cream cheese, softened and mashed
  • 1 c. finely chopped celery
  • 1 c. finely chopped green and red pepper
  • 12 oz. shrimp, chopped and chilled in ice water
  • 1 c. mayonnaise
  • 1 Tbsp. grated onion
  • 1 Tbsp. horseradish
  • 1 Tbsp. capers, drained
  • 1/2 tsp. hot pepper sauce
  • salt to taste
  • 1/2 head shredded lettuce (for garnish)
  • lemon/lime slices (for decoration)

Directions

    Dissolve gelatin in cold water.

    Bring tomato soup to a boil in saucepan.

    Add gelatin and allow to cool.

    When cool, add cream cheese.

    Stir in all other ingredients.

    Pour into an oiled 9 x 5-inch loaf pan; cover and chill for 2 to 4 hours or until set. To serve, unmold on large platter.

    Garnish with lettuce and lemon and lime slices.
