  • 7 -8 lbs pork shoulder
  • 1 onion
  • 1 green bell pepper
  • 32 ounces chicken broth
  • 12 ounces mole
  • 8 ounces water

Directions

    Slice Onions and Peppers.

    Place into a slowcooker.

    Rinse roast.

    Rub roast with salt and pepper.

    Brown all sides of the roast in a heavy skillet.

    Place roast into slow cooker.

    Add chicken broth, mole sauce and water.

    Slow cook for 6 - 8 hours, until meat thermometer reads 170 degrees.

    Remove roast from cooker and allow to set for 30 minutes before slicing.

    Serve with mole gravy from the slow cooker.
