  • 1/2 c. granulated sugar
  • 1/4 c. packed brown sugar
  • 1/2 c. margarine or butter, softened
  • 3 eggs
  • 2 tsp. vanilla
  • 1 1/2 c. unbleached all-purpose flour
  • 1/2 c. wheat bran
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/2 c. grated carrots
  • 1 c. peeled, cored and chopped apples
  • 1/2 c. golden raisins, softened in hot water and drained
  • 1/2 c. chopped nuts (walnuts or pecans)
  • 1/2 c. shredded coconut

Directions

    Grease a 9-inch loaf pan.

    Preheat oven to 325°.

    In large bowl, cream sugars and margarine until smooth and light.

    Add eggs, one at a time, beating well after each addition.

    Stir in vanilla.

    In separate bowl, combine flour, bran, baking powder, cinnamon and salt.

    Add carrots, apples, raisins, nuts and coconut and toss to combine thoroughly.

    Stir into creamed mixture, blending well.

    Spoon into loaf pan and bake for 1 hour or until bread tests done.
