- 1/2 c. granulated sugar
- 1/4 c. packed brown sugar
- 1/2 c. margarine or butter, softened
- 3 eggs
- 2 tsp. vanilla
- 1 1/2 c. unbleached all-purpose flour
- 1/2 c. wheat bran
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 1/2 c. grated carrots
- 1 c. peeled, cored and chopped apples
- 1/2 c. golden raisins, softened in hot water and drained
- 1/2 c. chopped nuts (walnuts or pecans)
- 1/2 c. shredded coconut
Directions

1Grease a 9-inch loaf pan.

2Preheat oven to 325°.

3In large bowl, cream sugars and margarine until smooth and light.

4Add eggs, one at a time, beating well after each addition.

5Stir in vanilla.

6In separate bowl, combine flour, bran, baking powder, cinnamon and salt.

7Add carrots, apples, raisins, nuts and coconut and toss to combine thoroughly.

8Stir into creamed mixture, blending well.

9Spoon into loaf pan and bake for 1 hour or until bread tests done.
