- 1 c. chopped fully cooked ham
- 1/2 c. chopped onion
- 2 Tbsp. cooking oil
- 6 eggs
- salt and pepper to taste
- 1 c. (4 oz.) shredded Cheddar cheese
- minced fresh chives
Directions

1In a large skillet, saute potatoes, ham and onion in oil for 10 minutes or until potatoes are tender. In a small bowl, beat eggs, salt and pepper. Add to skillet; cook, stirring occasionally, until eggs are set. Remove from heat and gently stir in cheese. Spoon onto a serving platter; sprinkle with chives.
