- 1-2 Tbsp. olive oil
- 1 lb. sirloin, cut into strips
- 1-2 cloves garlic, crushed
- 1 large eggplant, peeled & cut into thin strips
- 4 scallions sliced or 1 small onion, chopped
- 1/2 lb. sliced fresh mushrooms
- 1/2 red bell pepper cut into strips
- 1/2 green bell pepper cut into strips
- 1 14 oz. can tomatoes or 4 med. tomatoes peeled & chopped
- 2 Tbsp. ketchup
- 3 Tbsp. dry white wine
- 1/2 cup sliced Kalamata (ripe) olives
- 3 oz. crumbled feta
Directions

1Cook beef in oil, remove beef. Add more oil if needed and cook garlic, egg plant, scallions for 5 minutes.

2Add mushrooms and peppers, cook 5 minutes.

3Add ketchup, wine, olives.

4Simmer 5-8 minutes, add beef, heat.

5Serve alone or on rice or pasta.
