Ingredients

  • 1-2 Tbsp. olive oil
  • 1 lb. sirloin, cut into strips
  • 1-2 cloves garlic, crushed
  • 1 large eggplant, peeled & cut into thin strips
  • 4 scallions sliced or 1 small onion, chopped
  • 1/2 lb. sliced fresh mushrooms
  • 1/2 red bell pepper cut into strips
  • 1/2 green bell pepper cut into strips
  • 1 14 oz. can tomatoes or 4 med. tomatoes peeled & chopped
  • 2 Tbsp. ketchup
  • 3 Tbsp. dry white wine
  • 1/2 cup sliced Kalamata (ripe) olives
  • 3 oz. crumbled feta

Directions

    Cook beef in oil, remove beef. Add more oil if needed and cook garlic, egg plant, scallions for 5 minutes.

    Add mushrooms and peppers, cook 5 minutes.

    Add ketchup, wine, olives.

    Simmer 5-8 minutes, add beef, heat.

    Serve alone or on rice or pasta.
