Mozzarella Rice Balls

Ingredients

  • 2 c. cooked rice, cold
  • 1/2 c. grated Parmesan
  • 1/4 c. finely chopped, roasted red peppers
  • 1 egg, lightly beaten
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 8 (1/2-inch) cubes Mozzarella cheese
  • 1/2 c. Italian-style bread crumbs
  • 6 c. olive oil (for frying)
  • 3 c. marinara sauce

Directions

    In a medium bowl, combine rice, Parmesan cheese, roasted peppers, egg, salt and pepper.

    Shape rice balls using 1/3 cup rice mixture for each ball. Gently insert cheese cube into center of each ball.

    Re-shape rice mixture around cheese cube to cover completely.

    Coat balls with bread crumbs.
