Ingredients
- 2 c. cooked rice, cold
- 1/2 c. grated Parmesan
- 1/4 c. finely chopped, roasted red peppers
- 1 egg, lightly beaten
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 8 (1/2-inch) cubes Mozzarella cheese
- 1/2 c. Italian-style bread crumbs
- 6 c. olive oil (for frying)
- 3 c. marinara sauce
Directions

1In a medium bowl, combine rice, Parmesan cheese, roasted peppers, egg, salt and pepper.

2Shape rice balls using 1/3 cup rice mixture for each ball. Gently insert cheese cube into center of each ball.

3Re-shape rice mixture around cheese cube to cover completely.

4Coat balls with bread crumbs.
