- 1 pound bratwurst sausage
- 1 (3 pound) chicken, boned
- Salt, to taste
- White pepper, to taste
- 1/4 cup plus 1 tablespoon dry white wine
- 2 tablespoons clarified butter
- 3/4 pound grapes, peeled
- 1 teaspoon arrowroot
Directions

1Poach sausage: Place sausage in saucepan with cold water to cover.

2Bring slowly to boil.

3Boil for 2 minutes.

4Remove and peel off skin.

5Preheat oven to 350 degrees F. Stuff chicken with sausage and truss with string.

6Season with salt and pepper.

7Place in ovenproof dish; add 1/4 cup white wine and butter.

8Bake 1 hour.

9Once roasted, remove string and set chicken aside.

10Heat pan juices in saucepan over moderate heat.

11Add grapes.
-
12Mix arrowroot with remaining wine and add to juices to thicken.

13To serve, place chicken on warmed platter and pour sauce on top.
