Ingredients

  • 2 tablespoons mayonnaise
  • 12 lemon, juice of
  • 14 cup roasted red pepper, finely chopped
  • 1 garlic clove
  • 4 mushroom caps, portobello large-stem removed
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon italian seasoning
  • salt
  • pepper
  • 12 cup mozzarella cheese, shredded
  • 4 slices red onions
  • 4 buns, whole-grain
  • 1 cup arugula or 1 cup other mixed greens

Directions

    Heat a grill or grill pan.

    Combine the mayo, lemon juice, red peppers and garlic.

    (Puree it, if you like it smooth).

    Rub the mushrooms with the olive oil, vinegar, Italian seasoning and s&p.

    Grill, top side down for 2-3 minutes, flip and immediately add the cheese.

    Cook for another 2-3 minutes, until the cheese is melted and the mushroom is fully cooked.

    While the mushrooms are cooking,grill the onions until browned and toast the buns.

    Top each bun with greens, grilled onions, mushrooms, and the red pepper mayo.
