Mushroom Rice

  • 3 c. hot rice, cooked in chicken broth
  • 1 c. fresh mushrooms, sliced
  • 2 Tbsp. butter
  • salt and pepper to taste
  • 2 Tbsp. Parmesan cheese
  • 1/2 c. peas
  • 1 Tbsp. grated onion
  • 1 Tbsp. chopped parsley

Directions

    Saute mushrooms in butter until soft (3 to 4 minutes) and add rice, peas, onion, salt and pepper.

    Mix well; cover pan and heat over very low heat for a few minutes until piping hot.

    Spoon into serving dish and sprinkle with cheese and parsley.
