- 3 c. hot rice, cooked in chicken broth
- 1 c. fresh mushrooms, sliced
- 2 Tbsp. butter
- salt and pepper to taste
- 2 Tbsp. Parmesan cheese
- 1/2 c. peas
- 1 Tbsp. grated onion
- 1 Tbsp. chopped parsley
Directions

1Saute mushrooms in butter until soft (3 to 4 minutes) and add rice, peas, onion, salt and pepper.

2Mix well; cover pan and heat over very low heat for a few minutes until piping hot.

3Spoon into serving dish and sprinkle with cheese and parsley.
