- 2 c. fresh mushrooms
- 3 Tbsp. corn oil
- 1 Tbsp. lemon juice
- 1 clove garlic, crushed
- freshly ground pepper
- 1/2 tsp. French mustard
- 1/2 tsp. salt
- 1 Tbsp. parsley, finely chopped
Directions

1Wipe the mushrooms with a clean damp cloth.

2Leave them whole and do not remove the stalks.

3Whisk together the oil, lemon juice, garlic, mustard, salt, pepper and parsley.

4Pour the dressing over the mushrooms and toss well to make sure that each mushroom is coated with the dressing.

5Chill, covered, for a few hours before serving.
