Ingredients

  • 14 oz zucchini, coarsely grated
  • 3 slices bacon, finely chopped
  • 1 large onion, finely chopped
  • 1 cup self-rising flour
  • 5 None eggs, lightly beaten
  • 1 cup grated Cheddar cheese
  • 1/4 cup vegetable oil
  • None None Carrot, cucumber, to decorate
  • 1 pkg (8 oz) cream cheese, softened
  • 2 tbsp milk

Directions

    Preheat the oven to 400°F. Lightly grease a 12-cup muffin pan.

    Combine zucchini, bacon, onion, flour, eggs, cheese and oil in a bowl and season to taste. Spoon into prepared pan.

    Bake for 20 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Meanwhile, combine cream cheese and milk in a medium bowl and season to taste. Spread over each cake. Decorate with carrot and cucumber to serve.
