- 14 oz zucchini, coarsely grated
- 3 slices bacon, finely chopped
- 1 large onion, finely chopped
- 1 cup self-rising flour
- 5 None eggs, lightly beaten
- 1 cup grated Cheddar cheese
- 1/4 cup vegetable oil
- None None Carrot, cucumber, to decorate
- 1 pkg (8 oz) cream cheese, softened
- 2 tbsp milk
Directions

1Preheat the oven to 400°F. Lightly grease a 12-cup muffin pan.

2Combine zucchini, bacon, onion, flour, eggs, cheese and oil in a bowl and season to taste. Spoon into prepared pan.

3Bake for 20 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Meanwhile, combine cream cheese and milk in a medium bowl and season to taste. Spread over each cake. Decorate with carrot and cucumber to serve.
